Zardetto's winemaking technique combines state of the art technology with a revival of ancient tradition. Short contact between juice and skins results in an especially aromatic bouquet and the preservation of noble tannic compounds which allow the wine to age. Following fermentation a precise blend of red and white wine is created, and the regal character of a fine prosecco begins to take shape. Fabio Zardetto trained at Conegliano, one of Italy's top oenological schools, and with many years of experience, has established a reputation as the region's top producer of sparkling wine.
