Vibrant and deep ruby color. The very attractive nose has aromas of fresh blackberry, red currant and dried fruit. The palate is round and opens with earthy/herbal tones and finishes with silky flavors of cassis, chocolate and black pepper. Balanced and drinkable now, but also an excellent addition to the collector's cellar. Food Affinities: Start with a base of a hearty red meat, duck or veal cut. To bring out the flavors in the wine, complement the entree with sides or sauces featuring mushrooms, roasted tomatoes or garden spices (oregano or thyme).

Brought up all in barrel, the 2021 Cabernet Sauvignon has a classy, slightly old school-like vibe in its red and black fruits as well as leather, spicy herbs, and tobacco-driven aromas and flavors. It's medium-bodied, has good acidity and tannins, and a lengthy finish. It's going to offer ample pleasure over the coming decade or so.
