Cristalino Cava Extra Dry
Aromas of apple with bright flavors of citrus, peach and green apple on the palate come through in a slightly off-dry style that is refreshing and luscious. A touch of yeasty toast adds complexity and the finish is clean and elegant. Great with fried food, Asian-spiced foods, or barbecued ribs.
Along with DO wines and sangria, Cava is one of what Bernth calls García Carrión’s “three pillars of success.” The Spanish sparkler, which boasts its own DO status, is a bargain compared to Champagne—though it too is made by the traditional method, unlike Prosecco. Neutral for the most part, with a touch of toasty wheat and baked apple on the nose. Typical cava petrol invades the palate, but it's overrun by tastier, fresher apple and banana flavors. Exhibits some light toastiness on the finish.
A well-balanced cava showing floral and candied citrus notes, a fine structure and lingering finish. It's delicate and ideal as an aperitif.
