Beautiful scents of raspberry and cherry on the nose with fresh, clean strawberry and cherry flavors in the mouth, and a consistent bead. The finish is clean and crisp and invites another sip. An excellent match for fried appetizers such as calamari or light desserts such as creme brulee. It is also excellent on its own or with fresh fruit.
Along with DO wines and sangria, Cava is one of what Bernth calls García Carrión’s “three pillars of success.” The Spanish sparkler, which boasts its own DO status, is a bargain compared to Champagne—though it too is made by the traditional method, unlike Prosecco. The dark and rusty color is almost red. Aromas of roasted red fruits, tire rubber and baked beans precede a foamy palate with no smoothness. Cherry-skin flavors finish rough then hollow.
