Relying on naturally-occurring yeasts, we fermented 80% of the grapes in 900-gallon French oak casks, called foudres, with the remainder in previously- used small French oak barrels. We then aged the wine six months on its lees (the spent yeast) in neutral barrels. The combination of the right clones and cool growing region produced juicy tropical fruit and lemongrass flavors with a touch of minerality at the end of a long finish that are perfect with a wide range of food, including grilled seafood, chicken, oysters, creamy pastas dishes and summer salads.

As always an intense, stridently varietal rendition rife with the unmistakable herbaceousness and fresh-grass qualities unique to Sauvignon Blanc but built on a very deep foundation of well-ripened fruit, the Grgich Hills latest Fumé Blanc is a marvelously expressive look at the grape and one that is as bright and lively as it is so very rich. It is a touch taut at the moment and ideally needs a few years of age before relaxing and blooming into its best, and, as previous incarnations have proven year after year, it is a wine with an exceptionally long life ahead.

The 2021 Sauvignon Blanc Fumé Blanc is rock-solid, with reductive notes of lime, honeyed apple, and crushed stone in its juicy, medium-bodied, vibrant profile. It's a borderline outstanding Sauvignon Blanc to enjoy over the coming 2-3 years.

Fermented and matured in a combination of oak barrels and foudres, the 2021 Fume Blanc Estate features grassy, herbal scents, plus crushed stone and pencil shavings. There's not a lot of fruit up front, but some ripe melon and fig notes emerge on the medium-bodied palate. Plump and silky in texture, with a grapefruity finish, it's a solid, food-friendly Sauvignon Blanc. Published: Dec 29, 2023
