The NV Dry Sack Medium is produced with Palomino and some Pedro Ximénez grapes, but with care not to mark the wine with a lot of PX character. It's bottled with an average age of seven years and 29 grams of residual sugar. This is one of the better-known brands, and it has an Oloroso character but it's still quite elegant, not too sweet, with just a touch that would make it quite approachable as an aperitif, with cheese and even as part of cocktails.
